Should one eat the head of a lamb on Rosh Hashanah, and what substitutes are acceptable?

Synopsis

The Mechaber rules one eats the head of a lamb with the declaration 'May we be as a head and not a tail,' and also as a remembrance of the ram of Isaac. The Mishnah Berurah says a ram's head is preferable to a lamb's. Both the Magen Avraham and Mishnah Berurah permit substituting with the head of any animal or bird if a lamb's head is unavailable.
