What type of meat should be used for the zeroa (shankbone) and how should it be prepared?

Synopsis

The Mechaber states the custom is to use a forearm (zeroa) roasted on coals, and an egg that is cooked. The Rema adds that in his locale the egg is also roasted. The Magen Avraham notes the roasted zeroa may not be eaten at the Seder (since roasted meat is forbidden on Seder night) and discusses the RSha'L's dissenting practice.
