May one reseal an oven on Shabbat after removing food from it, when the food might not yet be fully cooked?

Synopsis

Resealing the oven is permitted during the day when food is presumed fully cooked. At night, close to the time of insulation, resealing is forbidden since the food may not yet be fully cooked and resealing would accelerate cooking. This applies even via a non-Jew.
